Thursday, September 25, 2008Can you feel it? Oh, I can, and I am so happy. Happy to have the crisp air. The extra blankets on beds. The pumpkins at the markets. The treasures from nature.
I found these little gumdrops placed on a table by one of my children. Definitely not Charlie. Maybe Andrew. Probably Libby. Those made me happy too.
And recipes that call for apples. Or pumpkin. Cinnamon. Spice. I want to bake it all.
I opted for pumpkin cookies for our cookie of the week. Made yesterday. With five left today. Just five. The ones with nuts. The ones I like. I promised everyone I would make more today. They were that good.

Pumpkin Drop Cookies:
1 cup pumpkin :: 1 cup butter :: 1 cup sugar :: 1/2 tsp salt :: 1 tsp vanilla :: 1 egg :: 2 cups flour :: 1 tsp baking soda :: 1 tsp baking powder :: 1 tsp cinnamon
Blend together pumpkin, butter, sugar. Add dry ingredients. Mix well. Drop by rounded tablespoons onto cookie sheet. Bake at 350 for 10-12 minutes.
I made 2 cookie sheets without nuts. With the remaining dough, I added walnuts. Pecans would be delicious, also.

ReplyDeleteOh, I wish I had time for baking! Denmark's got the largest apple harvest for years, so I really should. I'll take time this weekend.

What perfect timing, I just opened a can of pumpkin yesterday but only needed a tbsp, so I was going to look for a recipe today for cookies or muffins to use up the rest of the can :-) I will certainly give these a try.

Have you seen these? While I'm currently on a "no buying stuff" kick, I think I might have to break my own rule & go out and buy a donut pan just so that I can make a batch!!!

I love fall too. It's my favorite time of year. Actually, I should qualify that and say I like it HERE in Colorado. I never liked it in Alaska, where you got "Oh look... the leaves have turned yellow and.... oh. They've all fallen down. And... oh my gosh, is it snowing now?!"

ReplyDeleteI've already been baking this week- and it's still in the upper 70's and fairly humid (as in, the AC is still running for sure) but next week promises highs around 59... so more baking will be instore!! Um, and knitting... I have mittens on the mind...

I am intrigued by the pumpkin cookies, you Americans are so adventurous with your baking, in fact, so adventurous with pumpkins, over here we rarely venture beyond carving them for lanterns.
